Stuffed baked tomatoes


INGREDIENTS

  • 1 cup of cooked quinoa (red or yellow)
  • 1 cup of green peas (from frozen)
  • 4 large tomatoes
  • 1 diced onion or 1 teaspoon of onion powder
  • 3 cloves of chopped garlic or 1 teaspoon of garlic powder
  • 1 cup of soaked cashews
  • 1 TBSP lemon juice
  • 1 cup fresh basil finely chopped
  • 1/2 cup of pine nuts
  • Salt and freshly ground black pepper to taste
  • 1 tsp dried Italian seasoning

INSTRUCTIONS
1. Preheat the oven to 375 °F/190 °C
2. Cut off the tops of the tomatoes ("lids") and set aside. Scoop out the inside flesh set aside.
3. Make a sauce by mixing cashews, tomato flesh, lemon juice, fresh garlic and 1/3 cup of water in a blender until creamy.
4. In a medium bowl mix cooked quinoa, green peas, basil, Italian seasoning, pine nuts, creamy sauce and stir until well combined. Season to taste with salt and pepper.
5. Divide the mixture between tomatoes and place the "lids” on top.
6. Place the stuffed tomatoes in a baking dish. Bake for 20 minutes, until the skin looks wrinkled.
7. Serve stuffed tomatoes warm or cold. Enjoy!



Coconut truffles

  • 2 cups/500g of pitted soft dates
  • ½ cup/100g shredded coconut
  • 3 tablespoons cocoa powder
  • ½ teaspoon pure vanilla extract
  • 1 pinch of salt


Instructions

  1. In a food processer blend dates and 2 TBS cocoa powder.
  2. To assemble the truffles, scoop up 1 teaspoon of the mixture and roll it into a ball. Roll the chocolate ball in the shredded coconut, Repeat until you use up the mixture.
  3. Store in an airtight container in the fridge until ready to serve.
